Forget wrestling a whole turkey onto your smoker this Thanksgiving. A beautifully smoked turkey breast delivers everything you love about holiday turkey without the extra work. With the right seasoning, steady heat, and a little patience, you'll get tender, juicy white meat with a gorgeous wood-fired crust.
For this cook, we're firing up the offset smoker with a combination of cherry and white oak. Cherry brings a mild, slightly sweet smoke that complements poultry, while oak provides a steady, clean-burning heat. Together, they create a balanced flavor that enhances the turkey without overpowering it.
The secret to keeping turkey breast juicy is a good brine, controlled smoker temperatures, and a generous coating of garlic herb butter. Unlike brisket or pork shoulder, turkey breast doesn't benefit from an extended low-and-slow cook. Running the offset at 275°F allows the meat to cook evenly while developing a flavorful exterior without drying out.
Whether you're preparing Thanksgiving dinner, hosting a holiday gathering, or looking for something different from traditional barbecue, this smoked turkey breast deserves a place at the table. Serve it alongside smoked mac and cheese, Southern-style green beans, and cranberry sauce for a holiday feast worth remembering.

Garlic Herb Butter
- 1/2 cup unsalted butter (1 stick), softened
- 4 garlic cloves, minced
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme, finely chopped
- 1 teaspoon coarse black pepper
- 1 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
Instructions
1. Brine the Turkey Breast
- In a large pot, combine 2 cups of water, kosher salt, brown sugar, garlic, rosemary, thyme, bay leaves, and peppercorns.
- Heat gently, stirring until the salt and sugar dissolve.
- Remove from heat and add the remaining cold water and orange slices.
- Refrigerate until the brine is completely chilled.
- Submerge the turkey breast in the brine and refrigerate for 12–18 hours at 40°F or below.
- Remove the turkey breast and pat thoroughly dry with paper towels.
- Refrigerate uncovered for 1–2 hours to help dry the exterior.
- Skip the brine if using a turkey breast already injected with a salt solution.
2. Prepare the Garlic Herb Butter
- Combine softened butter, minced garlic, rosemary, thyme, black pepper, lemon zest, and lemon juice in a bowl.
- Mix until thoroughly incorporated.
- Set aside 2 tablespoons of the butter in a separate container for finishing.
- If using skin-on turkey breast, carefully loosen the skin without tearing it.
- Spread approximately half the remaining butter underneath the skin.
- Reserve the rest for basting during the cook.
3. Season the Turkey Breast
- Combine the black pepper, garlic powder, onion powder, smoked paprika, dried thyme, and dried rosemary.
- Lightly coat the turkey breast with olive oil.
- Apply the seasoning evenly over all sides.
- Allow the turkey to sit at room temperature for 20–30 minutes while preparing the smoker.
4. Prepare the Offset Smoker
- Build a clean-burning fire using white oak as the primary fuel.
- Add cherry wood for a mild, sweet smoke flavor.
- Preheat the offset smoker to 275°F.
- Maintain steady airflow through the firebox to produce thin, clean smoke instead of thick white smoke.
- Position a water pan inside the cooking chamber if desired.
- Allow the smoker temperature to stabilize before adding the turkey.
5. Smoke the Turkey Breast
- Place the turkey breast directly on the smoker grate with the skin facing upward, if applicable.
- Position the thicker end toward the hotter side of the cooking chamber.
- Insert a leave-in thermometer into the thickest portion of the breast.
- Maintain the smoker between 265°F and 285°F, targeting 275°F.
- Smoke for approximately 3–5 hours, depending on thickness.
- After the first 90 minutes, lightly baste the turkey with the reserved garlic herb butter.
- Repeat basting once more if needed.
- Rotate the turkey if the firebox side is cooking significantly faster.
- Continue smoking until the thickest portion of the breast reaches 165°F.
6. Rest and Slice
- Remove the turkey breast from the smoker and transfer it to a cutting board.
- Brush with the 2 tablespoons of garlic herb butter reserved before cooking, using a clean brush.
- Tent loosely with aluminum foil.
- Rest for 15–20 minutes before slicing.
- Slice against the grain into approximately 1/4-inch-thick pieces.
- Serve immediately with your favorite holiday sides.
Tips for the Perfect Smoked Turkey Breast
- Use cherry and white oak: White oak creates steady heat while cherry adds a mild sweetness that works beautifully with poultry.
- Maintain 275°F: Turkey breast is lean and doesn't need an extremely long cook. A steady 275°F produces excellent results.
- Avoid heavy smoke: Thick, dirty smoke can make turkey taste bitter. Keep your fire burning clean.
- Don't overcook: Internal temperature matters more than time. Always verify that the thickest portion reaches 165°F.
- Use unsalted butter: The brine already adds salt, so unsalted butter helps prevent an overly salty finished turkey.
- Rest before slicing: Allowing the turkey to rest helps retain moisture when slicing.
What to Serve with Smoked Turkey Breast
Smoked turkey breast pairs perfectly with rich, comforting holiday sides. Our favorite combination includes smoked mac and cheese, smoked cranberry sauce, buttery mashed potatoes, and Southern green beans.
Leftover turkey is just as delicious the following day. Use it for smoked turkey sandwiches, turkey pot pie, or sliders with cranberry sauce and melted cheese.
Smoking Swines Tip: For the best presentation, slice your turkey breast immediately before serving and spoon a little warm, unsalted butter or the collected resting juices over the slices. This keeps the meat moist and gives it a beautiful finish.
