Smoky Maple Bacon Jam with Coffee and Brown Sugar

This Smoky Maple Bacon Jam packs sweet, savory, smoky, and tangy flavor into one ridiculously versatile condiment. Crispy bacon forms the base while onion and garlic cook down in the rendered bacon fat, giving every spoonful a deep, rich flavor.
Real maple syrup and dark brown sugar bring caramel-like sweetness without overpowering the bacon. Apple cider vinegar adds just enough acidity to cut through the richness, while brewed black coffee gives the jam a darker, slightly roasted flavor that fits perfectly alongside smoked and grilled meats.
Pile it onto burgers, spoon it over smoked brisket, add it to breakfast sandwiches, or serve it alongside crackers and cream cheese as an easy appetizer. It also makes a killer addition to grilled cheese, pulled pork, or a thick-cut pork chop straight off the smoker.
The key is giving the mixture enough time to slowly reduce. As the liquid cooks down, the bacon and onions become coated in a sticky, glossy sauce that thickens even more as it cools.
Ingredients
- 1 lb good-quality bacon, diced
- 1 medium yellow onion, about 1/2 pound, chopped
- 2 large garlic cloves, minced
- 0.25 cup real maple syrup
- 0.25 cup apple cider vinegar
- 0.25 cup brewed black coffee
- 0.25 cup dark brown sugar, packed
- Salt, to taste
- Black pepper, to taste
Instructions
- Add the diced bacon to a large cast-iron skillet or heavy-bottomed pan over medium heat.
- Cook until the bacon is browned and beginning to crisp, stirring occasionally.
- Remove the bacon with a slotted spoon and set aside, leaving about 2 tablespoons of rendered bacon fat in the skillet.
- Add the chopped onion to the skillet and cook for 6–8 minutes, stirring occasionally, until softened and lightly caramelized.
- Add the minced garlic and cook for about 1 minute, just until fragrant.
- Return the cooked bacon to the skillet.
- Pour in the maple syrup, apple cider vinegar, brewed coffee, and dark brown sugar.
- Stir everything together and bring the mixture to a gentle simmer.
- Reduce the heat to low and cook uncovered for 25–35 minutes, stirring occasionally, until the liquid has reduced and the mixture becomes thick and jammy.
- Season with salt and black pepper to taste. Go lightly on the salt since the bacon already brings plenty of seasoning.
- Remove from the heat and allow the bacon jam to cool for 10–15 minutes.
- For a finer, spreadable texture, pulse the cooled mixture a few times in a food processor. Leave it chunky if you prefer a more rustic texture.
- Transfer to an airtight container and refrigerate until ready to serve.
