If the original mac and cheese is already a problem at the dinner table, this one takes things completely over the top. We're loading creamy macaroni with shrimp, lobster, crab, four different cheeses, and just enough sherry to give the sauce some serious depth.
And yes, before the "seafood and cheese don't go together" crowd enters the chat — we don't care. Shrimp, lobster, and crab tucked into a creamy cheese sauce absolutely works, especially when you've got Parmesan, cheddar, Monterey Jack, and mozzarella bringing different flavors and textures to the party.
This is definitely one of those dishes you save for people you actually like. Seafood prices aren't getting any friendlier, and we're putting a full pound and a half of seafood into this pan. Nobody who just happened to stop by is getting a scoop.
The key is treating the seafood gently. Cook the shrimp and lobster only until they're almost done before folding them into the mac and cheese. They'll finish cooking in the oven while the cheese sauce gets bubbly and the top turns beautifully golden.
