These Cheesy Sausage Hashbrown Bites combine savory breakfast sausage, crispy shredded potatoes, cheddar cheese, and cream cheese into an easy handheld bite. They’re hearty enough for breakfast but work just as well as an appetizer for game day, holidays, or weekend gatherings.
The combination of Bisquick and cream cheese helps hold everything together while keeping the inside tender and cheesy. As the bites bake, the sausage cooks through and the exposed edges of the hash browns turn golden brown and slightly crisp.
You can assemble the mixture ahead of time and keep it refrigerated until you're ready to bake. Forming the bites into similar-sized balls helps them cook evenly and makes serving simple.
Serve them warm on their own or alongside hot sauce, ranch, spicy mayo, or maple syrup for dipping. They’re also an easy addition to a larger breakfast or brunch spread.
